蛋白质的分子颗粒直径在0.1—0.001μm，属于胶体范围。在蛋白质中加入无机盐（如硫酸铵、硫酸钠、氯化钠等），会吸引大量水分子与这些无机盐离子水合，于是蛋白质表面暴露出来的疏水性区域增加，彼此靠着疏水性作用力结合，而从溶液中沉淀，这种作用便称为盐析。 值得注意的是，盐析是一个可逆过程，可将盐析出来的蛋白质再次溶于水而不影响原蛋白质的性质。不同的无机盐对盐析的作用是不同的，同一种盐对于不同蛋白质的作用效果也是不同的。所以，在某些实验，可利用盐析分离出不同的蛋白质。

Salting out (also known as antisolvent crystallization, precipitation crystallization, or drowning out) is an effect based on the electrolyte-nonelectrolyte interaction, in which the non-electrolyte could be less soluble at high salt concentrations. It is used as method of separating proteins. The salt concentration needed for the protein to precipitate out of the solution differs from protein to protein. This process is also used to concentrate dilute solutions of proteins. Dialysis can be used to remove the salt if needed. |
