米糠油色泽淡黄，沸点达254°C，适合炒及炸之用。米糠油有八成不饱和脂肪酸（单元不饱和脂肪酸占47%，多元不饱和脂肪酸占33%），加上有丰富维生素E及其他抗氧化物，因此被认为是健康的食油。米糠油属于不饱和度高的食用油，一般适合用来炒菜，油烟少也较不油腻。高品质的米糠油还可直接饮用，且可用来做凉拌菜。
米糠油主要在东亚，例如日本及中国使用。但由于其精炼过程复杂且成本高昂，因此一直未有普及。
