芙蓉蛋是一道中国粤菜，以叉烧（或以火腿代替）、虾仁、芽菜、韭菜、洋葱等配料混以鸡蛋煎制而成。道道菜式传到欧美地区后，为配合当地口味而被改良，变成类似西式蛋饼的食品。

相传芙蓉蛋是清代翰林朱善祥在云南任主考时吃到的地方菜，因菜味鲜、甘香、软滑，神似绽放的白芙蓉，故名“芙蓉蛋”，其回到家乡后，他结合了当地的饮食习惯重新调整口味。从此，芙蓉蛋便在浙江省桐乡市濮院得到流传 。

The name comes from the Cantonese language. Egg foo young is derived from fu yung egg slices, a mainland Chinese recipe from Shanghai.
