高汤,粤语称上汤,是用作烹调的清汤。一般用肉类中的下脚料(例如猪皮、下水、牛蹄、骨头),加少量调味料(中国菜加葱、姜、料酒;西餐加香叶、胡椒、香芹、百里香等),有时加少量蔬菜,在水中小火慢炖几个小时,撇去泡沫和表面油脂而成。粤菜中会把上汤的剩肉加水再煮,得出来的叫二汤,也可作高汤之用。 在中国菜中,含悬浮脂肪多而呈乳白色的高汤也称为奶汤。中国烹饪中的吊汤,是指对高汤按下列步骤进一步精制:将高汤加热到接近沸腾,加入剁细的鸡肉,在不沸腾的情况下让其进一步吸附汤内的悬浮物和增加溶解的蛋白质等鲜味成分,然后捞出鸡肉过滤(例如川菜名菜开水白菜)。吊汤可进行一次或重复多次。欧洲烹饪也有加入鸡蛋蛋白澄化清汤的。
