参巴酱是一种广泛流行于星马一带的辣椒酱，其经常运用于娘惹家常菜以及街边小吃之中(例如咖喱叻沙)。也由于是源自家常菜的调味，因此制作参巴酱时所运用的香辛料及食材也因各人的口味习惯与用途而异，由数种至十多种不等。而较为一般的做法是把烘香的峇拉煎、浸泡过且磨碎的虾米下锅爆香后，加入剁碎的辣椒、干辣椒末(或粗辣椒粉)、细磨成茸的蒜头、红葱头(依喜好及用途可加入香茅、南姜、黄姜、罗望子与青柠汁)以及调味后煸炒至稠酱状，再均匀拌入适量的糖、盐后即成。
