奶油炒面糊法语:roux英语发音:/ˈr/,亦作法语:rue法语:panada),亦作奶酪面粉糊或简称作炒面糊,是一种在法国菜常用的增稠剂,以小麦面粉跟脂肪(常用牛油)混和以后煮成。它是传统法式烹饪的五大母酱其中三种(即:西班牙酱、天鹅绒酱及贝夏媚酱)的主要原料。脂肪与面粉的比例按重量约为一比一,用低筋面粉。脂肪不一定要用固体的牛油,亦可用液体黄油,甚至猪油、菜油也可。

欧风咖喱亦有用奶油炒面糊来令煮出来的咖喱汁变稠成为咖喱酱。

Roux /ˈr/ is flour and fat cooked together and used to thicken sauces. The fat is butter in French cuisine, but may be lard or vegetable oil in other cuisines. The roux is used in three of the mother sauces of classical French cooking: béchamel sauce, velouté sauce, and espagnole sauce. Clarified butter, vegetable oils, bacon drippings or lard are commonly used fats. It is used as a thickener for gravy, other sauces, soups and stews. It is typically made from equal parts of flour and fat by weight.
