牛百页，或作牛百叶，俗作牛柏叶，是牛的内脏之一，即牛只胃部中的第三个间隔瓣胃(omasum)。瓣胃成叶片状，功用是吸收水份及发酵产生的酸。

牛柏叶可以作食物材料，一般用作火锅、炒食等用途。广东人饮茶时也会把它蒸熟当点心。新鲜的牛柏叶必须经过处理才会爽脆可口。处理方法可使用双氧水泡制。

The omasum, also known as the bible, the fardel, the manyplies and the psalterium, is the third compartment of the stomach in ruminants. Though its functions have not been well-studied, it appears to primarily aid in the absorption of water, magnesium, and the volatile fatty acids produced by rumen fermentation, that have not been absorbed into the bloodstream yet. The numerous folds of its mucosa are thought to trap digesta particles so the maximum amount of nutrients may be absorbed.
