听力文摘 Researchers call these sensory devices olfactory receptors. Of the human genome's 20,000 or so genes, almost a thousand code for olfactory receptors. Inside a rat's nose are up to 1,000 different types of olfactory receptors, whereas humans only have 100 to 200 types. By seven months of gestation, the fetus' taste buds are fully developed, and its olfactory receptors, which allow it to smell, are functioning. Food and drinks taste different because pressurized cabins lower blood oxygen levels, which reduces the ability of olfactory receptors (i.e. the ability to smell). That's thanks to the sheer number of olfactory receptors they have. Being the eyeball-dependent apes that we are, only about 400 of those olfactory receptor genes are still functional, each of them is specific to certain chemicals. But it's not like you can't taste anything — it's just that more subtle flavors involve more volatile compounds that are picked up by your olfactory receptors. TED-Ed(视频版) With a few million olfactory receptors in our noses, we clearly don't lack the ability to smell well. According to Professor Russell Keast, variations in our smell receptor (or olfactory receptor) genes determine what we taste when we eat Coriander. As you chew your food, air is forced up your nasal passages, so your olfactory receptor cells are registering information at the same time as your taste receptors are, so you're both smelling and tasting simultaneously. TED-Ed(视频版) Even at our elephant's young age, her trunk is already 1.5 meters long and contains five times as many olfactory receptors as a human nose, allowing her to smell standing water several kilometers away.

嗅觉受器 Olfactory receptor(重定向自Olfactory receptors)

Olfactory receptors (Odorant receptors) expressed in the cell membranes of olfactory receptor neurons are responsible for the detection of odor molecules. Activated olfactory receptors are the initial player in a signal transduction cascade which ultimately produces a nerve impulse which is transmitted to the brain. These receptors are members of the class A rhodopsin-like family of G protein-coupled receptors (GPCRs). The olfactory receptors form a multigene family consisting of around 800 genes in humans and 1400 genes in mice. |
