白鼬（学名：Mustela erminea）为鼬科鼬属的动物。

形似黄鼬，身体细长，四肢短小；体长25～35厘米，尾长6～10厘米；毛色随季节不同，夏季毛色背部为灰棕色，腹部为白色，足背为灰白色；冬季毛色除了尾端黑色，全身纯白。

The stoat (Mustela erminea), also known as the short-tailed weasel, is a species of Mustelidae native to Eurasia and North America, distinguished from the least weasel by its larger size and longer tail with a prominent black tip. The name ermine is often, but not always, used for the animal in its pure white winter coat, or the fur thereof. In the late 19th century, stoats were introduced into New Zealand to control rabbits.
