梅斯卡尔酒（Mezcal）是龙舌兰酒的一种，主要产于墨西哥南部的瓦哈卡州，根据墨西哥1994年通过的新法律，只有6个行政区生产的龙舌兰酒可以称为梅斯卡尔酒，原料也只限在特定的五种龙舌兰之内。梅斯卡尔酒的体积酒精度约在38至40%之间，其销售以墨西哥内销市场为主。

有些品牌的梅斯卡尔酒瓶中装有一种寄生在龙舌兰草上的蝴蝶幼虫（当地称为Gusano），这种虫子墨西哥人偶会在日常生活中用作菜肴原料。但是，关于在这种酒里放虫子的作法之起源众说纷纭，其中有种说法认为最早这样做的厂商其实是一家位于美国德克萨斯州的酒厂，因为在制造过程中发生失误，意外让虫子遗留在原料中而逐渐变成常见的习惯，另一种说法是一位叫Jacobo Lozano Páez的人于1940年发明的，据说加入这种虫子可以改善酒的味道。除了放入一两条完整的幼虫之作法外，有的品牌在贩卖时是采用酒与虫子分开，以随酒奉赠一小包盐和虫子磨碎混制成的粉末取代的作法。与Tequila类似，喝梅斯卡尔酒时，也经常会加盐和柠檬一同饮用。

Mezcal (or mescal) (/mɛsˈkæl/) is a distilled alcoholic beverage made from any type of agave plant native to Mexico. The word mezcal comes from Nahuatl mexcalli [meʃˈkalːi] metl [met͡ɬ] and ixcalli [iʃˈkalːi] which means "oven-cooked agave".

The agave grows in many parts of Mexico, though most mezcal is made in Oaxaca. It can also be made in Durango, Guanajuato, Guerrero, San Luis Potosi, Tamaulipas, Zacatecas, and the recently approved Michoacan. A saying attributed to Oaxaca regarding the drink is: "Para todo mal, mezcal, y para todo bien, también." ("For every ill, Mezcal, and for every good as well.").
