Der blau markierte Fettsäure-Rest ist einfach ungesättigt und leitet sich von der Ölsäure ab, der grün markierte Linolsäure-Rest ist zweifach, der rot markierte Linolensäure-Rest ist dreifach ungesättigt. Die Kohlenstoff-Kohlenstoff-Doppelbindungen sind cis-konfiguriert. Im Zentrum ist schwarz das dreifach acylierte Glycerin erkennbar. Öle enthalten einen höheren Anteil an essentiellen Fettsäure-Resten (= ungesättigte Fettsäure-Reste) als Fette.[7]

亚油酸（Linoleic acid，LA），又称亚麻油酸，IUPAC名：(9Z,12Z)-9,12-十八碳二烯酸，速记法名称为 18:2n-6，是一种含有两个双键的ω-6脂肪酸。

Linoleic acid (LA) is a polyunsaturated omega-6 fatty acid. It is a colorless liquid at room temperature. In physiological literature, it has a lipid number of 18:2 cis,cis-9,12. Linoleic acid is a carboxylic acid with an 18-carbon chain and two cis double bonds; with the first double bond located at the sixth carbon from the methyl end.
