寿司（日语：寿司、鮨、鲊、寿し〔寿司〕／すし）是一种日本料理，主要材料是用醋调味过，以肥小而稍带甜味的日本珍珠米所煮成的饭，加入醋、糖、盐等调味，降温后加上鱼肉、海鲜、蔬菜、鸡蛋或其他肉类等作配料。原为一种保存食物的方法：以醋酸令食物的酸碱值下降，抑制微生物生长，以阻慢食物腐败的速度。

寿司既可以作为小吃也可以作正餐，配料可以是生的、也可以是熟的，又或者是腌过的。视乎配料的不同，不同寿司的价格、档次差距甚大。

寿司在日本以外地区也十分流行，世界各地回转寿司式的寿司店也多不胜数。

Sushi(すし, 寿司, 鮨) is a food preparation originating in Japan, consisting of cooked vinegared rice(鮨饭,sushi-meshi) combined with other ingredients(ネタ,neta) such as raw seafood, vegetables and sometimes tropical fruits. Ingredients and forms of sushi presentation vary widely, but the ingredient which all sushi have in common is rice (also referred to as shari(しゃり) or sumeshi(酢饭)).
