越南香菜 Persicaria odorata

越南香菜(学名:Persicaria odorata)又名越南芫荽叻沙叶,是蓼科春蓼属的一种香料植物,在东南亚地区常会用它的叶子来烹调食物。

在越南料理里常会将越南香菜拿来做生菜沙拉或是加在春卷里食用。在煮牛肉河粉时也会添加越南香菜来配色及增添风味。在吃鸭仔蛋时也常会加上越南香菜一起食用。

在新加坡与马来西亚会以切碎的越南香菜来制做一种称为叻沙的香辣汤底,这种汤底是以越南香菜做为主要材料,因此在当地称越南香菜为叻沙叶。

澳洲正在研究以越南香菜为原料来提炼一种称为「kesom oil」的精油。

Persicaria odorata, the Vietnamese coriander, is an herb whose leaves are used in Southeast Asian cooking. Other English names for the herb include Vietnamese mint, Vietnamese cilantro, Cambodian mint, hot mint, laksa leaf and praew leaf. Its Vietnamese name is rau răm, while in Indonesia, Malaysia and Singapore it is called daun kesum, daun kesom or daun laksa. In Thailand, it is called phak phai (ผักไผ่) and the Hmong word for it is luam laws. In Laos, it is called phak phaew (ຜັກແພວ), and in Cambodia chi krasang tomhom (ជីរក្រសាំងទំហំ) or chi pong tea koun (ជីរពងទាកូន). In North-East India, Manipur state uses this as garnishing herb over various cuisines like eromba and singju. Manipuris called it as Phak-Phai.
