芝麻油（或称麻油、胡麻油、香油）是以芝麻为原料提炼制作的食用油。高温制程之纯芝麻油气味浓香，常呈淡红色或红中带黄。根据加工制作工艺的不同，分为小磨香油、机制香油和大槽香油三类 。

由于原料价格昂贵，常和其他食用植物油（成本考量，以大豆油或棉籽油为主）按比例混合调配。调配比例没有规定，上乘的100%纯芝麻油，未混入其它食用油，价格也较高。作为重要的食品调味料之一，常作为汤味或凉菜调味料，或直接淋撒在成品菜肴上以增加香味，是中国菜中不可少的调味料之一。
