海绵蛋糕为一种常见的蛋糕。鸡蛋加糖与香草精用电动搅拌器中高速度搅拌打至乳白色,粘稠状。再按情况加入不同味道(如柠檬味须加柠檬皮与柠檬汁),最后再加入面粉,拌匀十秒钟成面糊。
海绵蛋糕模子内侧刷上奶油洒上薄薄一层低粉,面糊倒入准备好的模子,放入烤炉用上火一百七十度下火一百八十度烤三十五到四十分钟即可。

Genoise 海绵蛋糕![]() ![]() A genoise (/ʒeɪˈnwɑːz/, /ʒəˈnwɑːz/, /dʒeɪˈnwɑːz/, or /dʒɛˈnwɑːz/; French pronunciation: [ʒenwaz]; Genoese cake or Genovese cake; rarely spelled "génoise" in English) is an Italian sponge cake named after the city of Genoa and closely associated with Italian and French cuisine. Instead of using chemical leavening, air is suspended in the batter through mixing to give volume to the cake. A genoise is not the same thing as a pain de Gênes, which is an almond cake. But a genoise is very close in composition and basic use to a pan di Spagna ("Spanish bread"), another Italian sponge cake. |
