五香粉的基本成份是磨成粉的白胡椒、肉桂、八角、丁香、小茴香籽。有些配方里还有干黄姜、豆蔻、甘草、胡椒、陈皮等，用来代替在当地比较货源较少的香料。在南方，普遍会用桂皮和橘皮来代替丁香及肉桂。不同的配方亦对各种香料的比例有不同的搭配。
