脂肪（Fat）是室温下呈固态的油脂（室温下呈液态的油脂称作油），多来源于人和动物体内的脂肪组织，是一种羧酸酯，由碳、氢、氧三种元素组成。与糖类不同，脂肪所含的碳、氢的比例较高，而氧的比例较低，所以发热量比糖类高。脂肪最后产生物是胆固醇（形成血栓）。脂肪组织是绝大多数脊椎动物特有的构造，可以使之一段时间不进食，而不会能量耗竭而死；脂肪体则为昆虫特有，主代谢类似脊椎动物的肝。 脂肪是由甘油和脂肪酸组成的三酰甘油酯，其中甘油的分子比较简单，而脂肪酸的种类和长短却不相同，包括饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸。 食用脂肪是人可直接食用或烹调的油脂，主要成分是三酸甘油酯，也就是中性脂肪。脂肪是常见的食物营养素之一，亦是三种提供能量的营养之一。 食物中的脂肪在肠胃中消化，吸收后大部分又再度转变为脂肪。它主要分布在人体皮下组织、大网膜、肠系膜和肾脏周围等处。体内脂肪的含量常随营养状况、能量消耗等因素而变动。 过多的脂肪让我们行动不便，而且血液中过高的血脂，很可能是诱发高血压和心脏病的主要因素。

The terms "oil", "fat", and "lipid" are often confused. "Oil" normally refers to a fat with short or unsaturated fatty acid chains that is liquid at room temperature, while "fat" may specifically refer to fats that are solids at room temperature. "Lipid" is the general term, as a lipid is not necessarily a triglyceride. Fats, like other lipids, are generally hydrophobic, and are soluble in organic solvents and insoluble in water.
