橄榄油是植物油的一种，由木犀科油橄榄（学名：Olea europaea L.；又被称为“洋橄榄”或“齐墩果”）的果实压榨而成，是一种常用的食油，也可用以制作化妆品、药物及油灯燃料等。橄榄油被誉为“地中海的液体黄金”。地中海国家的居民所说的“油”，指的总是“橄榄油”。西班牙语的“油”（aceite），是来自阿拉伯语阿泽特（azzáyt）一词，这个词的字面意思是“橄榄汁”。
